Spelt Pancakes
Ingredients
1 egg or egg yolk (or Egg Replacer)
¾ C. almond milk & lemon juice
1 tsp almond extract
1 Tbsp Tupelo honey
3 Tbsp olive oil
½ C. whole spelt flour
tsp aluminum free baking powder
¼ tsp Himalayan pink salt
¼ tsp nutmeg
Preparation
Mix the wet ingredients in a bowl. Add the dry ingredients to a bowl. Add the wet to the dry and mix until just combined. Add more milk to make a thin batter. Allow the mixture to rest for about ten minutes while you heat a cast iron skillet or an electric griddle. Add a few drops of oil to the skillet. Sprinkle water over the skillet. If the water dances and sizzles, it is hot enough. Pour a ⅓ cup of batter for each pancake. Cook until bubbles form then flip over. Serve with fresh fruit, or an all fruit jam.
