Spelt Crêpes

crepes [1]Ingredients
½ C. whole spelt flour
½ C. water

Preparation
Mix the water and the flour together using a wire whisk. Allow it to sit out overnight to ferment. In the morning thin the batter with water if necessary. Cook on a hot skillet. Fold in the crepe some sliced roasted apples or pears or peaches and roll together. Serve hot.
