Quinoa, Corn, Pea Casserole
1 tsp olive oil
4 scallions, sliced
2 cloves garlic, minced
½ tsp Himalayan sea salt
Freshly ground pepper
½ tsp ground turmeric or fresh
1 ½ Tbsp lemon juice
1 C sliced corn
½ C peas
2 C cooked quinoa
Preparation
Lightly sauté garlic, turmeric, scallions about a half minute. Sprinkle salt over all. Add corn and peas and cook on medium for 3 minutes. Add cooked quinoa and stir for an additional 3-5 minutes. Serve warm.
