Okinawa Sweet Potatoes
Place in the oven at about 370º for about 2-3 hours. Notice when their fragrance begins to fill the room. Take out when they feel soft to the touch. They will become a deep deep purple and the inside will be soft like jam or pudding. Choose Okinawan potatoes that are white without any spots or bruises for best baking results. If they taste chalky, the baking time has not been long enough. If their skins are hard, the baking temperature was too high. Okinawan sweet potatoes are packed full of nutrients.
