Onion Gravy

Sauté about a half a diced onion until it caramelizes the pan. Add spelt flour to the pan and create a roux or add spelt flour to water and make a smooth lump free mixture. Slowly add this to the sautéed onions, stirring with a heavy wooden spoon. Add water to thin. Add salt and pepper to taste and a sprinkle thyme leaves. Serve alongside spelt stuffing [2].
