Spelt Stuffing
Ingredients
2 C diced onions
1 C sliced mushrooms
10 C toasted spelt cubes or
10 C spelt corn bread cubed
1 tsp poultry seasoning
1 tsp fresh thyme leaves
1 tsp fresh marjoram leaves
Freshly ground black pepper
⅛ tsp Himalayan salt
½ C raisins or curants
½ C chopped walnuts
½ C chopped roasted chestnuts (omit)
3 C vegetable broth
Preparation
Sauté onion, mushroom, herbs in a little veggie broth. Pour sautéed veggies over bread crumbs in a very large mixing bowl. Add all herbs and toss together. Pour in enough broth to moisten or add additional water. Pack stuffing lightly into pan, and cover. Bake the above mixed ingredients in the oven 325º for 20 minutes.
