Pumpkin Bread
Ingredients
1 C. pumpkin puree
¾ C. almond milk
1 C. tupelo honey
2 eggs or
egg replacer
2 C. spelt flour
½ tsp aluminum free baking powder
2 tsp baking soda
½ tsp Himalayan salt
1 tsp ground cloves
1 tsp ground cinnamon
½ tsp nutmeg
¼ tsp allspice
1 C. raisins
1 C chopped walnuts
Combine everything in a blender. Add nuts/raisins by hand. Pour into a parchment lined bread baking pan. Bake at 350º for 50 – 60 minutes until tester comes out clean. Let it cool on a wire rack.
