Basil Pasta with Pine nuts

Pasta Ingredients
1 C. basil leaves
1 egg
1 – 1 ½ C. spelt flour
Pinch Himalayan salt
1 tsp olive oil

Preparation
Put basil, flour, salt in a food processor. Process. Add egg and olive oil, continue processing. Add more flour as necessary so mixture resembles little peas. Turn out on a floured board and knead as much flour as it will hold. Let it rest for about twenty minutes. Divide the dough into four. Flatten and put through your pasta maker.

Ingredients Pine Nut Sauce
1 recipe basil pasta (above)
½ sliced purple onion
1 Tbsp chopped parsley
2 tsp basil chiffonade
1 clove garlic minced
½ carrot diced into little cubes
1 lemon zest + juice
4 Tbsp roasted pine nuts (roasted walnuts)

Preparation Pine Nut Sauce
Boil water add spinach pasta. Cook until soft about 7 minutes. Sauté the onion, garlic, herbs carrots in a pan. Add the garlic last so it does not burn. Toss the sautéd mix with the cooked pasta. Add grated lemon zest and a squeeze of lemon juice over the top. To serve, add a sprinkling of a few roasted pine nuts.
