Roasted Grain Beverage

Ingredients:
1 Tbsp spelt berries
1 Tbsp buckwheat
3 Tbsp brown rice
2 Tbsp adzuki beans
1 Tbsp chickpeas
1 Tbsp chicory
1 Tbsp olive oil

Preparation
In a pan, roast grains and beans separately until well browned. Mix together and add oil. Cool and grind into powder. Prepare beverage to desired strength pouring boiling water over all.

Ingredients Spelt Kaffee
1 C. soaked spelt grain

Roasting Spelt
Roast spelt in a cast iron skillet until brown all over. Transfer all but 2 tablespoons of the kernels to a bowl, and continue roasting the remaining kernels until they are very dark in color, but not burned. Remove the kernels and mix with the lighter brown ones.

Prepare Spelt Roasted Beverage
To make 2 cups of spelt coffee, place 2 cups of water in a 1-quart saucepan; bring to a boil. Add 3 heaping tablespoons of the roasted kernels, and boil for about 10 minutes, or until the water is brown in color. Strain the brew, reserving the kernels, and serve. Add a few SPELT kafee kernels to the old kernels each day, until some kernels start to fall apart. Then discard and roast a new batch.

Caffeine
Kick the caffeine habit. Caffeine even in small amounts can stimulate cyst growth, unfortunately for many of us, this includes de-caffeinated chocolate. For someone who drinks a lot of caffeine, the eventual result can be fatigue, anxiety, depression and insomnia. Caffeine affects the body in many ways. Caffeine can leech calcium from the body, which is especially problematic if you are at risk for osteoporosis. While trying to eliminate caffeine from the diet, one is likely to experience caffeine withdrawal symptoms including fatigue and severe headaches. Excessive consumption of caffeine increases blood pressure, causes cholesterol levels to rise, and disturbs heart rhythms. Caffeine can increase gastrointestinal problems, including gastric reflux and acid stomach. Caffeine contributes to fibrocystic breast disease. Caffeine impairs fertility. Are there any alternatives to caffeine? It depends upon what you seek from your daily coffee or soda. If you enjoy the warm, comforting feeling of coffee in the morning, try a different morning drink: roasted grain beverage such as Inka, Caffix.

Carrot Juice

Ingredients
6 carrots

Preparation
Juice 6 carrots in a juicer. Sip it immediately to retain the freshness and the micronutrients. When recovering from a liver resection, carrot juice is wonderful to allay any tremors or shakes that might appear.

The three most important elements in carrots are Beta-carotene, Alpha Carotene, and Phytochemicals. Beta carotene usually receives the most attention when examining carrots. The body changes beta carotene into vitamin A, which is important in strengthening the vision, the immune system, keeping the skin, lungs and intestinal track in order, and promoting healthy cell growth.

Vitamin A is a pale yellow primary alcohol derived from carotene. It affects the formation and maintenance of skin, mucous membranes, bones, and teeth, vision and reproduction. In addition dietary Vitamin A, in the form of beta carotene, an antioxidant, may help reduce the risk of certain cancers.

Only so much beta carotene can be changed into vitamin A, and that which is not changed contributes to boosting the immune system and is also a potent antioxidant.

Alpha carotene. Beta carotene is not the only carotenoid. Often overlooked, and also found in carrots, is alpha carotene. According to an article in NCI Cancer Weekly (Nov. 13, 1989), Michiaki Murakoshi, who leads a team of biochemists at Japan’s Kyoto Prefectural University of Medicine, contends that alpha carotene may be more powerful than beta carotene in inhibiting processes that may lead to tumor growth.

Murakoshi indicates that neuroblastoma (cancer) cells coated with carotenoids experience a drop in N-myc activity compared to untreated cells. Research suggests that phytochemicals, working together with nutrients found in fruits, vegetables and nuts, may help slow the aging process and reduce the risk of many diseases, including cancer, heart disease, stroke, high blood pressure, cataracts, osteoporosis, and urinary tract infections. They can have complementary and overlapping mechanisms of action in the body, including antioxidant effects, modulation of detoxification enzymes, stimulation of the immune system, modulation of hormone metabolism, and antibacterial and antiviral effect.

“Phyto” is a Greek word that means plant and phytochemicals are usually related to plant pigments. So, fruit and vegetables that are bright colors – yellow, orange, red, green, blue, and purple – generally contain the most phytochemicals and the most nutrients.

Lemonade

lemonadeIngredients
½ lemon peeled cut in half
1 apple sweet variety:
fuji, golden delicious, gala

Preparation
Put the lemon through the hopper of the juicer. Next slice the apples into sections that will easily fit in the juicer opening. Pour over crushed ice and drink this refreshing lemonade on a hot summer’s day.

According to a book Back to Eden, lemons are filled with natural enzymes, lowers uric acid. On page 659 of Back to Eden, Mr. Kloss points out that, “The lemon is a wonderful stimulant to the liver and is a dissolvent of uric acid and other poisons, liquefies the bile, and is very good in cases of malaria. Sufferers of chronic rheumatism and gout will benefit by taking lemon juice, also those who have a tendency to bleed, uterine hemorrhages, etc.; rickets and tuberculosis. In pregnancy, it will help to build bone in the child.”

Another Lemonade Recipe
3 lemons juiced or
½ C lemon juice
⅓ C tupelo honey
4 C water

Blend together serve chilled.

Lemon Hot

Drink upon arising the juice of one lemon that has water added to it to equal a half a cup. Additionally throughout the day have a hot lemon drink. Naringenin in citrus fruits diminishes cyst development.

Ingredients
1 lemon juiced

Preparation
Heat a pot of hot water. Add the juice of one lemon to the hot water. Add a little tupelo honey if desired. Then get comfortable and sip it along while relaxing. I do not know how it works, but lemon juice diminishes pain from cystic organs, relieves migraine headaches, keeps me alkaline, diminishes joint pains and just makes me feel better. For a cough, try lemon juice mixed with tupelo honey. It squelches the cough. I have taken as many as 6 lemons a day to keep me alkaline or to relieve pain.

An electric citrus juicer works well. When traveling first roll the lemon to soften it. Then slice it in half and use a table knife to scrape the juice into a glass. A friend told me this works just as well with a spoon and there is no chance for the knife to slip. Add a slice to water glass or to juice.

Lemon Egg

imagesThis is a recipe for calcium citrate or lemon egg. It helps keep our bones strong while protecting our kidneys. One person has used lemon egg to help maintain alkalinity. Her nightly urinary pH runs about 7.8.

This takes about a day to complete. Carefully fill a wide mouth jar with a clean, whole, uncracked egg. Cover the egg with freshly squeezed lemon juice. Cover the jar and place in the refrigerator. Bubbles will form on the egg shell. The egg shell will begin dissolving and finally the mixture turns white. This make take about 24 hours. Carefully remove the egg and use as normal. There should still be a soft membrane surrounding the egg but no shell as this has dissolved into the lemon juice to make calcium citrate. Remove the egg. Place a tight lid on the remaining mixture. Shake well. The mixture will keep refrigerated for 3 days. Then toss and start fresh.

Take no more than one teaspoon per day initially because it can be very powerful. Start slowly. The amount may gradually be increased. Each individual is unique. Take the mixture for two weeks, and then leave off for two weeks. Take sips slowly, testing your nightly urinary pH to be sure you do not become too alkaline. Hold off if your nightly urinary pH registers 8.5.

Using the removed egg
Slowly cook the removed egg. Allow to cool. Once cooled carefully peel away the membrane and add it to the lemon egg mixture. This eggshell membrane has been found to be useful for osteoarthritis. In 7 days participants noticed increased flexibility.

Make your own eggshell membrane
Rinse about a dozen shells well in water. Remove any egg bits that might be stuck but don’t remove membrane as these have extra nutrients. Fill a stock pot with approximately 6 cups of filtered water and bring to a boil. Carefully put your eggshells into water. Let cook for 10 minutes. Drain shells. Spread the shells on glass or stainless steel baking sheet and let dry overnight. In the morning, put in a 200º oven for about 10 minutes or in a dehydrator. Once completed, put a few shells into a blender and run until they are pulverized into a granular form. Continue until all of your shells are powder. Store in a tightly sealed Mason jar in the cupboard away from heat or moisture.

Louise’s lemon egg

Try taking the shells of 2 cooked eggs, carefully peeling away all the white lining from the inside of the shells (previously soaking the eggs in warm water before cooking). Put the shells in a glass jar. Squeeze the juice from 1 to 1 ½ lemons over the egg shells. Crush the mixture with a fork into as many small pieces as possible increasing the surface area for the lemon reaction. After 24 hours strain and sip.

Another Lemon egg Recipe
Wash empty cooked eggshells in warm water until all the egg white is removed. Do not remove the membrane if you have arthritis or joint pains. The membrane contains nutrients to help this. Allow the washed shell to air dry. Grind the shells in a food processor.
Ingredients
½ teaspoon of powdered egg shell (approximately 400 mg of calcium)
½ a lemon juiced
Preparation
Put the powdered egg shell in a clean glass jar, add the freshly squeezed lemon juice. Leave at room temperature for 6 hours but no longer than 12 hours. Take a spoonful. Toss what you do not use and mix again the following day. Take only for two weeks then leave off for two weeks.

Juice Cranberry

2 C. fresh cranberries

Preparation
Put berries through the juicer. Makes about 2 ounces. Mix with one ounce of mineral water. Drink the juice but do not eat the berries which are too high in oxalates.

Cranberry Lemon Sparkle

Juice ½ lemon

Preparation
Add the juice squeezed from a half a lemon. Mix together; serve with a floating lemon slice.

Green or Red Cabbage Juice

Cabbage will help return hair to its natural color. If you are new to juicing try juicing an apple (gala or golden delicious) first, pour half of the apple juice into a shot glass. Without cleaning the juicer,  juice a quarter of a cabbage with 5-7 almonds. Sip the cabbage juice within twenty minutes. Follow it  with an apple juice chaser.
1 sweet apple.

Ingredients
¼ cabbage savoy (sweetest), green, red (high in iron)
5-7 almonds

Instructions
Slice the cabbage into wedges that will easily fit through the opening of the juicer. Juice a portion of cabbage then about 5 almonds then a bit more cabbage.

Yield: 2 ounces of cabbage juice

Cabbage is one of the healing marbles from the earth. I used the deep green leaves heated and mixed with kelp as a poultice to relieve liver cystic pain. I have also used this same poultice on the nap of my neck to relieve intense migraine headaches. Cabbage has something within that seems to stimulate the natural endorphins of the brain.  It is high in the element boron, necessary for bone strength. It is very high in vitamin C.  An observation: while taking cabbage juice daily I noticed my gray hairs returning to their natural color. Cabbage is a great protector of DNA; increasing the metabolism of estrogen by products through the liver.  Cabbage juice has a sulfuric odor. The sulfurins are what make cabbage so health giving.The sulfurins, the smelly part of cabbage is what researchers have found to be a powerful antioxidant. Cabbage juice provides 607 mg of potassium, or 17 percent of the 3,500 mg Food and Drug Administration daily value. Potassium and sodium regulate the body’s fluid balance.

After juicing cabbage, I notice that I must immediately take the pulp to the compost heap or if I am traveling, I will wrap it in a double plastic bag and toss it. The smell of the sulfurins takes over the room. These sulfurs are the antioxidants at work protecting the integrity of our DNA. Cabbage juice benefits.


Another recipe for Cabbage Juice
Sometimes cabbage is a bit pungent. To cut this try juicing an apple first, then the cabbage. Cut and core an apple removing the seeds. Apple seeds contain arsenic. Put the apple slices through the juicer. Reserve this apple juice as a chaser for the cabbage juice. Without cleaning the juicer, slice a quarter of a cabbage so the pieces can easily fit through the juicer. This can be green or red cabbage. I find Savoy cabbage to be the most pleasant tasting. I put this through the juicer and then I put about 10 almonds through the juicer as well. I drink the cabbage almond juice first and follow it with the apple juice.

Apple Juice


Ingredients
2 apples cut up cored

Instructions
Put apples through an apple-slicing device or cut  the seeds out and slice into wedges that will fit through the juicer. Juice wedges in the juicer. Golden delicious, Fuji, and Gala are delicious for juicing. There is another variety called Gravenstein from Sebastopol California, from the Russian River area of California. I really enjoy Gravensteins. They cannot be stored and must be eaten at the time of harvest. Gravensteins have a short peak season. Apple seeds contain arsenic and are to be avoided.

When making my daily juices, I juice the apples first and without cleaning the juice machine, I will then juice cabbage. This yields a much sweeter and a less sulfuric cabbage juice. I drink all juices immediately or within 20 minutes so they do not develop a yeast ferment which causes my liver cysts to grow.  Yield: 6 ounces of apple juice

Chia Fresca–Iskiate

Ingredients
10 oz of water
1 Tbsp dry chia seeds
Tsp lemon or lime juice
Tupelo honey to taste

Preparation:
Stir the chia seeds into the water; let them sit for about five minutes.  Stir again, and let sit for as long as you like.  The more it sits, the more gel-like the seeds and water become.  Add citrus juice and sweetener if you wish.

Chia Seed Oil
Chia oil is an interesting source for omega 3’s. Some have tried fish oil (really causes severe liver aches). all variety of forms of flax seed and its oil and capsules. These too seem to cause intense liver pains, liver growth and bloating. Currently hemp seed oil capsules,tend to give the munchies and a craving for sweets. Raw foodie caterers (raw fruits and vegetables only) from a local farmer’s market recommended some give Chia seeds a try.

Chia Seed Oil Capsules
Chia seed is one food that is super high in leucine. Leucine has been found to be helpful to create more muscle mass in middle aged men and help dialysis patients.
Chia seed is high in calcium, 5 times the calcium of milk. 631 mg per 100 grams of seed.
Chia seed is also high in protein, with 18 grams per 100 grams of seed.
The optimum ratio of Omega-3 to Omega-6 should be 3:1
Chia seed provides that ratio.
Chia seed is hydrophilic. Absorbing up to 14 times (Mix @ 9-10 times) its weight in water. This helps extend energy and endurance.
Chia seed is rich in antioxidant oils.
Chia seed contains chlorogenic acid, and
caffeic acid as well as myricetin, quercetin, and kaempferol flavonols. These compounds are both primary and synergistic antioxidants that contribute to the strong antioxidant activity of chia seed.
Chia seed is also low in sodium, only 19 mg per 100 grams.
A few my remember when Chia seeds were spread as a paste of clay figurines creating chia pets. This is the exact same chia. One can purchase chia in its natural seed form or grind them up and sprinkle them salads. Some people prefer the convenience taking chia oil capsules. Anutra Whole Salvia Hispanica Seed is all chia. It is an ancient Aztec product. It can be added to smoothies or sprinkle on top of salads or added to a sandwich. This is a good source of omega 3’s and essential fatty acids needed daily. Born to Run a book about the  Tarahumara Indians from a remote village in Mexico are a running tribe. For their fuel for long distance runs reaching 500 miles they drink chia seeds with water and lime. Read about one runner’s recipes from the meatless runner. Chia seeds have the interesting property that when they’re left in water for a few minutes, the water begins to gel.  Supposedly this is helpful in digestion, but I’m wondering if somehow chia could be used to make an energy gel.  (I’ll let you know if I perfect that one.)  For now, you’ll have to be satisfied with chia fresca (or iskiate), a popular drink made with chia seeds, water, and lemon or lime. Fun fact: years ago this was known as a chia pet, you would apply chia seeds to a lamb figurine. The lamb would grow wool of chia sprouts.

Cultured Dairy


If milk is something you cannot live without and are not willing to make your own almond, hempseed, coconut, rice, grain or nut milk, then purchase commercial organic, locally prepared, grain, seed or nut  milk. Note that Soy Milk to be avoided particularly with liver cysts. If you purchase animal based milks, then choose cultured dairy,  like buttermilk, yogurt,  cottage cheese, quark cheese, yogurt, plugra, or creme fraiche. Animal milks–goat or sheep is preferable to cow milk. Lowest fat dairy products are best as these would have the lowest amount of hormones. Pictured above is a low-phosphorus cow milk developed by a dialysis center for kidney patients that restrict phosphorus. Low phosphorus cow milk does have large solute particles that continue to increase the heavy workload on cystic kidneys.

Many farmer’s markets sell local goat cheese. I enjoy this cheese and found myself staying away from the farmers markets until after 1 pm in order to assure the market has sold out.

If you are not able to give up cheese, the following are better cheese choices in their order of health:

Goat Cheese fat free
Ementhaler or Swiss light cheese (with a low fat content)
Jarlsberg Lite thin sliced deli reduced fat Swiss cheese 1 slice ¾  ounce 2.5 grams fat,100 mg sodium
White smooth soft cheeses with a low fat content.
Other white soft cheeses are preferable to the hard yellow cheese.
Low sodium soft white cheese is preferable
Monterrey Jack cheese has 9 grams of fat whereas light swiss cheese has 2.5 grams of fat.
Estrogen is concentrated in the fatty portions.
